Spicy Gio Bi Salad with Vegetables

This recipe combines the savory flavours of Gio Bi with a spicy kick and refreshing vegetables for a satisfying and light salad.


  • For the salad:

    • 200g Gio Bi, thinly sliced
    • 1 cucumber, thinly sliced
    • 1 carrot, julienned
    • 1 red bell pepper, thinly sliced
    • 1/2 cup green beans, trimmed and blanched
    • 1/4 cup chopped red onion
    • 1/4 cup chopped fresh coriander
    • Handful of mint leaves, roughly chopped (optional)
  • For the dressing:

    • 2 tablespoons lime juice
    • 1 tablespoon fish sauce
    • 1 tablespoon rice vinegar
    • 1 teaspoon sriracha (adjust to your spice preference)
    • 1 clove garlic, minced
    • 1 tablespoon sugar
    • 1/2 teaspoon grated ginger (optional)
    • Pinch of black pepper
  • Additional toppings (optional):

    • Crushed peanuts
    • Sesame seeds
    • Fried shallots
    • Chili flakes


  1. Prepare the dressing: In a small bowl, whisk together lime juice, fish sauce, rice vinegar, sriracha, garlic, sugar, ginger (if using), and black pepper. Set aside.
  2. Assemble the salad: In a large bowl, combine Gio Bi, cucumber, carrot, bell pepper, green beans, red onion, coriander, and mint (if using).
  3. Drizzle the dressing over the salad and toss gently to coat all ingredients.
  4. Transfer the salad to a serving platter and garnish with desired toppings (peanuts, sesame seeds, shallots, chili flakes).
  5. Serve immediately and enjoy!


  • For a milder version, reduce the amount of sriracha or use a milder chili sauce.
  • You can add other vegetables like shredded cabbage, romaine lettuce, or bean sprouts to the salad.
  • Feel free to adjust the proportions of the ingredients to your liking.
  • For an extra flavor boost, marinate the Gio Bi in the dressing for 15-30 minutes before adding it to the salad.
