Vietnamese Pho with Gio Bi


  • 1tsp mushroom seasoning powder
  • 225g Gio Bi, thinly sliced
  • 115g rice noodles (banh pho)
  • 60g thinly sliced red onion
  • 60g chopped green onions
  • 60g chopped coriander
  • Lime wedges
  • Bean sprouts
  • Sriracha (optional)
  • Hoisin sauce (optional)
  • Nước chấm (fish sauce dipping sauce)


  1. Heat the mushroom broth in a large pot.
  2. Add the Gio Bi to the hot broth. Simmer for 3-5 minutes.
  3. Cook the rice noodles according to package instructions. Drain and rinse with cold water.
  4. Divide the noodles among serving bowls. Top with meat slices and ladle the broth over.
  5. Garnish with red onion, green onions, coriander, and lime wedges.
  6. Serve with bean sprouts, sriracha, hoisin sauce, and nước chấm for dipping.


  • Add vegetables like bok choy or carrots for extra nutrients and texture.
